Rhubarb Jam



I always wondered about this Rhubarb bunch in stores and never bought. But one of my friends told me about a recipe we can make from it and I was thrilled to try that. Thank u Ulka for recommending me this recipe.

We get rhubarbs pretty much in every store in the leafy vegetable section. It comes with large green leaves and red stems. It is also considered medicinal as a strong laxative. Yes, no harm in using it regularly :D

Contents:
-One Rhubarb bunch
-Lots of jaggery (rhubarb is pretty sour, so need lots of jaggery to get the sweet jam taste)
- I used two cups of jaggery initially thinking would be enough, but had to add little more for sweetness.

To Prepare:
1) Remove the leaves from the sticks
2) Clean the sticks and peel them (lot of thin fiber will come out)
3) Cut the sticks into small pieces.
4) Heat a thick bottom pan and add the cut pieces and jaggery.
5) Cook till jam consistency.

It takes a little longer to melt the jaggery and cook rhubarb properly.

Voila....rubharb jam is ready. Kids love this and we are happy :D!!
